⭐️Aubergine Traybake with Peanut, Chilli and Ginger Dressing⭐️

This was super meaty its texture and it fed 3 people happily with a bunch of whole grain rice!

We really enjoy a traybake as it’s just a chuck everything in method and then you’ve just got the sauce to contend with but this was easy and packed a punch on flavour. 100% making it again 🙂

Booksta-haul on Holiday!

I’m staying on the Isle of Wight at my mums and persuaded her to do a book clear out (there is no need for anyone to have over 2 copies of ‘How to learn Italian’ 😂! And she kindly passed these two gorgeous old cookbooks to me that she used when she did catering training in her twenties 🥰

I love cooking so the science behind food and also making my favourite desserts is super exciting and I can’t wait to flick through them. I’m also borrowing a Yotam Ottolengi book for some veggie inspiration!

I kept this in my fridge for over a week not really taking any notice and ate it as a ‘use up’ before going on holiday. OH MAN. If I had known it tasted as good as it does, it would have been gone in a few days.

Luckily the use by date gives you lots of time AND two portions 👍🏻👍🏻 I used the suggestion on the back and simply served with butter, Parmesan and black pepper ❤️

Also who could resist something so pretty in pink!

The HUMBLE BREAKFAST BISCUIT

This is a chuck together recipe really, and very easy to replace items to make it vegan if you want 🙂 About 180kcal each they are great to bake ahead and have for a quick on the run breakfast or post workout snack!

I used:
– 200g @quakeroatsuk rolled oats
– 150g whole bread flour (SR or Plain will work too)
– 2 tsp of pumpkin spice mix (use just cinnamon if you don’t have the mix)
– 1/2 tsp bicarbonate of soda
– 2 very ripe bananas, mashed
– 130g carrots, grated
– 1 apple, grated
– 1 large egg, beaten
– 50ml olive oil
– 2 tbsp clear lavender runny honey

Method:
– Line baking tray with paper and preheat to 160 (fan)
– Combine dry ingredients
– Mash bananas, and whisk in the oil, honey, egg.
– Add to dry ingredients and add the grated carrot and apple.
– Combine using a fork then roll into twelve balls on your baking tray.
– Shape into cookie shapes with your hands. (these don’t spread so you can have a smaller space between cookies).
– Cook for 15 mins, turning tray halfway until tops are slightly firm.
(These freeze well too!!!)

WAGAMAMAS –

I was super excited at the return of Wagamamas, and had a day with my mum in town so we went for a HUGE lunch 😂

I had:
– Prawn Gyoza (the vegetable ones are super yummy too!)
– Vegan Yasai Katsu Curry which has aubergine, butternut squash and sweet potatoes (SO YUM!)
– White Chocolate & Matcha Cheesecake

I don’t feel like there was a reduced menu at all, the options were great, service was fantastic and I didn’t eat anything else until dinner our gone 8pm!

I’ve meant to be cracking down on my NVQ assignment (hence the radio silence) but I’ve honestly just been flapping around the house not achieving much at all!

I did buy 4 new fish for my tropical tank which is nice and they add lots of personality and colour to it after a few losses over lockdown. – YES I do believe my fish have personalities!

Yesterday I was feeling all Greek in the sunshine so we put together a very simple flatbread which had:

– Baby Gem Lettuce
– Avocado

COFFEE CAKE BREAKFAST BOWL

Okay – so it’s loosely coffee cake but this was an unexpectedly nice combo. I used @momafoods oats with water, topped with frozen raspberries and a @grazedotcom box ‘coffee, walnut cake tub’ which has chunky walnuts, raisins and chocolate covered coffee beans 👍🏻👍🏻

It’s really set me up for a day of cleaning my house 😳 (and finishing my book, and just generally sweating in the heat!)

A bit of non-fiction which I feel is super important and I always feel more enthusiastic when it’s summer. I don’t know about anyone else, but I struggle with the want to change and be 100% eco friendly and actually achieving or sticking to it.

So I am hoping this will give just a few tips so I can change our home life gradually with less pressure. I know some might argue that we should all make huge changes and right now but it’s hard enough with a family of four and a job and life so it will have to be baby steps..

HONEYCOMB FLAPJACKS

These are a @janespatisserie recipe. I had a dream about making flapjacks and then of course it had to happen and I took them along with the Blondies to the beach get together. They went down SO well but I do still have lots left 😂 (oh well 😉)
