The HUMBLE BREAKFAST BISCUIT

This is a chuck together recipe really, and very easy to replace items to make it vegan if you want 🙂 About 180kcal each they are great to bake ahead and have for a quick on the run breakfast or post workout snack!

I used:
– 200g @quakeroatsuk rolled oats
– 150g whole bread flour (SR or Plain will work too)
– 2 tsp of pumpkin spice mix (use just cinnamon if you don’t have the mix)
– 1/2 tsp bicarbonate of soda
– 2 very ripe bananas, mashed
– 130g carrots, grated
– 1 apple, grated
– 1 large egg, beaten
– 50ml olive oil
– 2 tbsp clear lavender runny honey

Method:
– Line baking tray with paper and preheat to 160 (fan)
– Combine dry ingredients
– Mash bananas, and whisk in the oil, honey, egg.
– Add to dry ingredients and add the grated carrot and apple.
– Combine using a fork then roll into twelve balls on your baking tray.
– Shape into cookie shapes with your hands. (these don’t spread so you can have a smaller space between cookies).
– Cook for 15 mins, turning tray halfway until tops are slightly firm.
(These freeze well too!!!)
